Recreating Text in a Photo

Question

I've been editing photos for about 3 years now but I am relatively new to using Photoshop's special features. My question is how to recreate a text from a photo.

What I mean by that is for example, replacing a newspaper title with your own name. Like making 'New York Times' into 'John Doe' so 'John Doe' has the exact same look as the original newspaper title.

I've seen some very experienced photoshop users make cool edits like this and I want to do it too. I know I can use the match font tool but that doesn't always bring up the exact font of what I'm trying to match.

Any help would be appreciated. Thanks in advance.

HiMost of these "Logo" have been hand draw in the beginning. If you have Photoshop CC, do you know you can do this? Click on Type > Match Font and drag the crop marks to surround the type you want the font for. In this case it found two similar fonts in my font folder, and another five I could sync from TypeKit.
