Where can I find and what is the tool called which replaces text on an image?

If the text is on a separate text layer then you can use the type tool to edit it.
However, if the text is merged with the image in a single layer, then replacing it will involve removing and filling the unwanted text area, e.g. with the clone tool to build up the image in the area where text used to be, then using the type tool to add new text.

Choose the command Edit > Find and Replace Text.
It finds instances of the text that are on type layers. If the text has been flattened or rasterized to pixels, it can’t be found this way.
