When using Photofahop how do I remove the background and replace it with a solid color?

Could you please post screenshots with the pertinent Panels (Toolbar, Layers, Options Bar, …) visible?

@mrsammy – As @Semaphoric wrote, the modern approach is to use Select Subject, which uses AI training to identify the main subject of interest (YMMV).

 

You can also look at the Object Selection Tool if the subject isn't detected to your satisfaction.

 

Then there are many traditional "old school" methods.

 

It really depends on the image background and subject.

The edges may need manual amendations.

If you select the subject, you could invert that selection. With that selection active, make a new Color Fill layer, and it will be applied as a mask to the color layer..
