This is a problem I have had now for about 6 years across several versions of Photoshop.
I have a custom shape that I put text inside, the amount of text varies with each order I get so I resize the text until it fits the shape exactly. To do this I highlight all the text and click into the font size control and just use up and down arrows until I get the shape filled exactly.
However, about 25% of the time the text will totally vanish at a random font size, this can be frustrating as it may be the size that is required to be used. If I carry on clicking it will come back but by then may be too big. I can get around it by getting it somewhere close when it hasn't vanished and then adjust line spacing instead but it's not ideal.
Any ideas please?

When your text "vanishes", is there a plus sign in the lower right? If so, it means the text frame is too small to fit the text and you have two choices:
This is the most likely reason, but it could be something else. Show a screenshot if this isn't it.
When the text gets too big for the frame, choose Undo and make another choice instead of trying to fix it when it's not working. It might be easier and less stressful that way. 🙂
Note: You don't have to use whole numbers for the text size, btw. Try 13.5 or 16.2.

It can vanish at any point i.e even when the shape is only half full of text.

When that happens, choose undo and select the text. If we can see a screenshot of the text with the Character panel (Window menu) we might see the issue.
You can also copy and paste the frame to another file and share a link to the .psd so we can look at it.
It could be leading or superscript or a couple of other things.

Here you can see that the text is visible at 16pt, 18pt but not at 17pt
