Running both Photoshop CC 2019 and Photoshop CC 2018 after update?

I recently downloaded upgrade to Photoshop CC. Now I noticed my Mac Pro (Late 2013) computer is running Adobe Photoshop CC 2018 v19.1.7 and Adobe Photoshop CC 2019. v20.0.1.    Should I throw away Photoshop 2018? I seem to be having some bugs with my Wacom tablet since the upgrade.

You can uninstall PS 2018 without affecting 2019.  However unless you are extremely tight on disk space, I would wait a few weeks/months before you uninstall 2018 in case you find issues in 2019 that affect your work.

What OS is the Mac Pro running?

There are known issues with both High Sierra and Mojave with Photoshop CC.

We don't often see tablet issues with OSX, but I think Pen Pressure appears in the above linked pages.
