selecting parts of an image more accurately with the quick selection tool

I'm working on a training video trying to select part of an image to edit it, so that part of the image, person, animal, or thing, is shown in colour, but the background is black and white.

This 'almost' works, the problem lies in getting edges more accurate. The quick selection tool works to a point going over the image via the mouse, and ALT to remove parts, BUT... As usual the videos make this look Sooooo easy, not.

Can anyone suggest a way to follow the edges of a thing in an image to select only it, and not some of the edges?

It depends on the image, how well the edge is visible and the contrast vs other objects and the background. There are also options for each tool, like in the Quick Selection, you have "Enhance Edge" which does some extra work to improve on your selection. You can try that. The Object Selection tool is also pretty good and produces clean edges most of the time with no need for extra tuning, but again - depends on the image and the situation.

Once you've made a selection, you can also use the Select and Mask module to refine the selection using the Smooth / Contrast / Shift edge sliders and the Refine Edge tool for hair and other fuzzy selections.
