Command + Z for Mac

Ctrl + Z for Windows

And if you want to move back multiple steps, just hold Options key on Mac, or alt for Windows.

About Shortcuts You can set additional shortcuts via Edit Keyboard Shortcuts.   You can also buy Devices like Tablets, Keyboards and other specialized controllers that have keys, buttons etc  which can be programmed to enter a series of key strokes when used.  Here are some example of some of the devices you can buy.

I have recently purchased a Logitech G13 and started playing with it.  Notice I have sets its joystick left and right   functions to step back and forward through History and its up and down functions to select up and down in the layers stack
