How exactly do I save it like a selection? Can you show in picture please...

Well, you can't "write with roses" but in addition to filling with a pattern, as per Derek, you can use a clipping mask.

Add a type layer

Add the roses layer over the type layer (this is an Adobe Stock image you can license), or you can use your own
Right click the roses > Create clipping mask

Perhaps select a single rose and jump it to a new layer (Ctrl/Cmd J) and duplicate for added interest

Not working here. I created a type-text, then i put the roses over it, and selected ‘Create clipping mask’, nothing happen. The text color is the same, no roses. I use IMPACT font.
