I recently updated my photoshop on my computer and now my images look pixelated in a way I have never seen. My RGB is set to 8. I am not sure what is going on. Nothing has changed in my settings.

Try turning off Use Graphcs Processor under the Performance tab in Photoshop preferences to see if that makes any difference.

Have you tried to turn off GPU as Derek suggests?
Generally: If you can zoom in on it, it's file corruption. If it stays same or similar when zooming, it's the video card. That doesn't necessarily mean the physical card, but also the driver. It does happen that Photoshop updates make new calls to the driver, thereby exposing latent driver bugs that were in fact there the whole time.

Do you have latest drivers for your graphics card? I mean the ones from the card manufacturer's website, not MS or Apple.
