Why would I want more versions by default? Why not do the update to the most recent version and remove the old?
(And how do I remove the older version(s) without damaging the newest version?)

You can uninstall the old versions (click on the three dots). When you update to a major new version you get the option to keep or delete the old versions. It used to be set, by default, to delete, but recently it defaults to keep. Many, me included, keep the old around for a while until any bugs that appear in the new version are ironed out.

When installing a new version you are given the option to remove previous versions
A lot of people, myself included like to keep previous versions because Adobe are known to introduce bugs in the new releases, you can uninstall the previous version using the CC app

also there is a bug in the installer that will auto install more than one verson if you had skipped one i.e, if you click upgrade on a verson that wasn't the last one then the ui will install the middle one first

Some of the bugs are with a specific graphics card or a specific OS and not everyone has them. I am among those who install the new one and learn the new features, but never commit to using it for real work until I know it’s stable.
