Hi, I'm trying to create an animated social media post and have round photo that I would like to zoom on to the page from small to bigger. I cant see a way of doing that by using any of the 3 options in the dropdown (postition, opacity, style). Saw a similar question asked years ago and the answer was to use the 'transform' option but that seems to have been replaced by the 'position' option.
Could you please post screenshots with the pertinent Panels (Toolbar, Layers, Timeline, Options Bar, …) visible?
Is the Layer in question a Smart Object?

It’s a little tricky, and very confusing. The available properties vary for different layers.
Many layer types, including pixel layers and text layers, only have Position, Opacity, and Style.
Shape layers have those plus Vector Mask Position and Vector Mask Enable.
Layer groups only have Opacity.
Placed objects have Transform, Opacity, and Style. The Transform property will record changes including position, scale, and rotation.
If you want to animate a transformation that is not available as a property for the type of layer you are animating, a workaround is to convert that layer into a Smart Object. A Smart Object has the same properties as a placed object (Transform, Opacity, and Style), so you can enable the Transform property for that Smart Object layer and if you scale it over time, that will be recorded in the keyframes.
