JPEG is probably the most popular file format I use, saving to social media mainly and then other use online on the web. As my screen shot attests, there is more to this file format and I want to learn. For instance, the side note you see on the screen shot says that there is more to 'saving options' but I don't know how to acces this advanced saving criteria. Also, even what I have posted for a screen shot shows 'dimmed' areas that I don't know how to access even if I knew what they were for. Bottom line, I am sadly weak in my understanding of how to properly set up JPEG's for posting online, let alone for this file formats many other uses. Where can I get the wholde story on all of this file format's capabilities and control settings?

To address your specific question on 8 bpc vs. 16 bpc Save As a Copy:
Save As/Save As a Copy will include the most metadata in a JPEG file, while the old Export > Save for Web (Legacy) option and the "new" Export As/Quick Export As feature is designed to remove or only offer limited metadata in the saved file for the smallest file size (they all use different algorithms). Compare the file sizes and compression values from left to right, one row at a time:

As a last area, I know the jpeg format does not support transparency but what is that reference to 'matte' that is dimmed in my screenshot but is not dimmed in your screenshots? Appreciation!
