how do you delete old projects on photoshop dashboard
I'm not sure what you mean by old projects on the Photoshop "dashboard".
If you mean the recent files on the Start workspace, then go to File > Open Recent > Clear Recent File List

Just to make sure you understand, Dave’s answer only removes the projects from the recent file list. It doesn’t actually delete any files from your computer.

Hello. What if you want to delete one or multiple projects, but not all of them? I can't seem to find that option anywhere. Anytime I click on a project name, rather then it highlighting it so I can delete it, it just opens the project up instead. Hoping someone can help. Thank you.

Use a proper file browser. The "recent files" list is just intended as a quick convenience, not a proper file organizer. It doesn't have the necessary tools.
The list just contains a passive pointer to a location on disk. If the file is moved, "recent files" will just keep pointing to the same, but now empty, space. It doesn't track the file. If the file is deleted in the operating system, it will still appear happily on the list.
In short, it's nothing you can rely on. It's a quick convenience, nothing more.
