Hello,
Hope you're all well.
Regarding dodge and burning is there any difference between using the dodge and burn tools in comparison to using the Brush tool with black and white when on a gray layer (mode:soft light) I.e. Will the outcome be any different either technically or visibly?

Presumably you mean using the PS D&B tools will be the technique which isn't destructive(?)
Additionally, what makes using the Brush tool of on a gray layer destructive?

Dodge and burn will be distructive while creating a gray layer will not be.

With the grey (non-destructive) method, after you've used the burn and dodge brushes, you can use the opacity slider in the Layers palette to fine tune the effect.
