photoshop select subject tolerance?

While using the selecting subject feature within photoshop, is there a sensitivity range or tolerance that I can use to select more or less of blended areas?

There is no sensitivity range or tolerance within this tool. Select subject is just a very quick way to make a rough selection of the most prominent part of the photo. To refine the selection you can use any of the other selection tools, e.g. the Quick selection tool or the Magic wand tool.  Or you can use Select and Mask like Nancy suggested.
