As I understand it, you need to fill out a property release--not a model--release, signed by you as both owner and creator of the work in question to show that the sketches were done by you.

1st case : drawing I created for which I am the only creator, there is no model nor other owner than me and they are pure invention based on various old paintings (17th cent.). What document do I need to fill in ?
2d case : photorealistic renderings I did with the support of AI to match at best with the original paintings from which they are inspired (not copied). What document do I need to fill in ?

I found it thanks to google at https://helpx.adobe.com/stock/contributor/help/property-release.html
Do I need to fill it even creating a portrait with AI "looking to" isaac newton", I mean but without be sure it is fidel to newton as there is no picture of him to compare with ?

Knowing that it is a drawing based on imagination and inspired from old paintings, in the property release PDF, what is the Property information ? (description adress, etc). There is none
what to state for the witness ? There is none...

You are the witness.

With AI, you will need to check the two boxes noting that the work being submitted is AI and that anyone pictured in the image is fictional. However, what you describe is a unique case, since Newton is not a fictional character but a dead one from centuries ago. Someone else here on the forums may be able to address this issue better than I.

But was I ask for help is also valid for any painting showing a dead celebrity or even abstract art. Do we need to fill in a property PDF when we create a image inspired (not copied) by a painting, old or not ?

Using a painting created by another artist to generate an AI image is an intellectual property violation.
As it says in this page:

I would say yes, based on my past experience. Namely, when I first became a contributor, I uploaded a few very cartoonish looking robots that bore absolutely no resemblance to actual human beings. This was before Adobe simply required us to check the boxes noting that the work being submitted was AI and that any humans depicted were fictional. I was still required to submit a property release.
Your case is unique in that you appear to be speaking of a character (Newton) who is NOT fictional but has been dead for years. The question might come down to this: will you get a moderator who even knows who Isaac Newton was? I'd submit a property release and see what happens.

A link will appear on the page where images are uploaded after you click the appropriate checkbox. See the last item listed in this graphic.

1st case would be a propertly release.
2nd case would also be a property release and check the Generated with AI box when submitting.
Those would be my suggestions without having actually seen the images in question.

Ok I am going to try and will post the result...

And read what @Jill_C just posted. These are muddy waters, especially without having seen the assets in question.

1st case, here is a sketch i did. in my case, what to add in the upper left box of the adobe property form (Attach visual reference of the property) ? a copy of all paintings that inspiured me ???
For my 2d case, an AI generated image bases on the same old paintings, same question, what do I need to add in the upper left box ?

You would include the image that you posted here. Also, you'll need to remove your signature. Adobe does not accept assets with signatures or watermarks. Remember that Adobe Stock is exactly that: stock, and not an art gallery.

Also, I'm finding it hard to imagine that Adobe would accept this if it's based on an existing sketch or painting by another artist, regardless of whether it's in the public domain or not.

I can now say that my sketches of Isaac Newton based on a compilation of various existing original masterworks and signed by myself as artist and provided with the Adobe anthorization form (filled in at minimum as I am the single author and there is no model) have been accepted by Adobe.
I am waiting for the approval of the AI color photorealistic versions enhanced in Photoshop (but submitted as AI generated images) that are not signed and also provided with the authorization form. Logically, they 'd be accepted. Wait and see.

You can't sign the artwork.

"You can't sign the artwork."
Yes I can, all the more that I am the artist and owner of that work (contrary to AI renderings that I do not sign). Adobe accepted the signature on my skteched.

If they accepted an image with a watermark / signature it was an error. The guidelines specifically state that signatures or watermarks of any kind are forbidden.

One told everything and its contrary in thos forum... Who to beleive ? As such documents are licenced, I need the offical reply from Adobe. Sorry, but I expect a bit more than opinions or replies opposite to the previous ones. At the end I think that I will learn more based on my own experience than on this forum.
