I had a free month of Adobe Stock, which I went to cancel, but was given extra free months as an incentive to continue. I accepted the extra free stuff but now when I cancel it has charged me for a month AND is charging me a CRAZY early cancellation fee!
This is extremely unfair and utterly terrible behaviour! These charges should not apply to those who only utilise the free membership! How can I undo these charges?

Adobe customer care can be contacted here: https://helpx.adobe.com/contact.html - click the small callout at the lower right of the screen and type "agent". I don't know what exactly you have subscribed, but offering extra free months normally comes at a price of a paid subscription. Contact Adobe customer care and negotiate your way out!
