I have licensed dozens of pieces of music, images, videos, etc from Adobe Stock.
Sometimes, months after creating content for YouTube or Facebook, my content is flagged as a copyright strike. If I'm lucky, I remembered to copy the license information to a text file, so I have it on hand. But many times I don't have that information handy.
How do I retrieve the license information for a previously licensed and downloaded asset? It doesn't seem to be available anywhere on the website.

Just as a follow-up... I also noticed that a few of my licensed assets are, strangely, no longer available on Adobe Stock, so if I wanted to re-use them, how would I do that?

You can't. If the contributor closed his or her account (likely), or their account was suspended (less likely), or they decided to delete the asset (more likely), the asset is unretrivable.

You will need systematically copy the licencing key.
In addition, I would also do a screenshot of the licenced asset:
You can also store the licensing terms with the asset. Keep the Adobe filename. If you want to change the name, keep the Adobe name at the end or at the beginning of the name.
I agree, this is some additional work to do, but it helps to keep you on the secure side. It would be great, however, if Adobe would also offer to download a PDF certificate for each licenced item so that you can keep the raptors at arm length.
I also download the then current licence and store that with the sound files.
