Homes here don't have cellars. So we have a humidity controlled wine fridge set at 45°F (7°C) to 65°F (18°C) that can also store cheeses.

I very much prefer a full bodied red wine (which means that most Pinot Noir in my price range doesn't work for me) but a Vouvray or the generic Chenin Blanc with baked fish works really well
Or, as Nancy said, a sparking white wine for a special occasion
