Some screen shots or a screen capture would be helpful to help troubleshoot this.
A coupld of questions I have:
How are you animating the text with the layer's Scale property or with a text animator?
What is the duration of your animation?
How are you adding easing?
I just tried a basic text scale (using the layer's Scale property) over 1 second and I couldn't replicate the problem you are having.

How are you altering the keyed position of the layer? Are you dragging the layer around? Or are you editing the motion path?

Did you try clicking the Accept Shadow switch to Only? It's the third choice with that menu, Off, On, Only are the three choices.

I don't think this is possible to achieve in the way you want.
The problem with what you are trying to achieve is that while the stroke looks like a rounded outline it is in fact the entrie shape.

Depending on what you want to do maybe.
Some of the features of plug-ins like element3D can be achieved using the native AE advanced 3D support but not most of them.
If you were only using Element 3D to import and animate 3D models that can be done natively now.
But E3D has other functions like the way it acts as a 3D model particle animator that are not something the native advanced 3D can replicate.

What export settings are you using?
Media Encoder has many presets that you can use when creating your files.
In general, ones that have lower bitrate will produce lower quality files.

A gltf is exported as a folder with several files inside of it, usually including a texture folder.
A GLTF model with textures will display with those textures when imported into an AE project and comp.
The textures remain in their folder and AE links to them.
If you change the content of the original image textures they will update in AE.

What you are describing is just the way the bezier Pen in Adobe software works.
Click and Drag to create a bezier (smooth) anchor point (vertex), this creates two direction handles attached to that point. The first handle controls the curvature of the line you just created, but the second handle controls the curvature of the next line.
To make a straight line after a curved line:
1. Create the curved line as normal.
2. Hold down Option (Mac) or Alt (Win) key on your keyboard and drag the direction handle of the second direction line (the one that is pointing away from the line you just made) back into the Anchor Point (vertex).
3. Click somewhere else to make your straight line.

Roland's method isn't easier it's just a way of doing it with a single layer and effects rather than using a track matte.
For new users the track matte concept shown in the video is probably the easiest to understand.
Note the video shows one way for working with a text layer and another for working with an image layer. The second technique shown (the track matte) will work with all layer types.

The different layer sizes in AE were probably caused by the import options you used.
Composition - Retain layer sizes: would result in each Ae layer being based on the content of each PSD layer.
Composition: Would make each layer the same size as the file dimensions.

Without more information on exactly what you want to achieve any advice will be very general.
There are a many plugins that can be used to make easing curves in AE.
To that I like are:
Flow: https://aescripts.com/flow/
and
Ease & Wizz: https://aescripts.com/ease-and-wizz/
Flow gives you a more intuitive graph editor and ease and wizz does it with scripts.
There is also an add on called Ease Copy (https://aescripts.com/easecopy/) that I like that lets you copy/paste easing from one property to another.

I believe the order of operations in AE is still, Masks, Effects, Transformations so Masks will affect layer source content, not the result of effects, especially the ones that generate graphic content. The only way around that I am aware of is to assign the mask as an FX mask in compositing options.

Option 1:
Masks apply before effects do so they are masking the source layer's content not the results of the effect.
To create a mask that applies to an effect you have to use the effect's Compositing option. They are located in the Timeline (and only in the timeline) as the last property group for the effect. Just click the plus sign to add the layer mask as an effects mask. There are limitations with this approach: You will need multiple masks if you also want to mask the layer's content and feather doesn't work the same way with effects masks.
Option 2
Your second attempt seems to have failed because you left the effect on the comp layer rather then moving it into the new comp. I assume you used the Leave all Attributes option instead of the Move all Attributes option in the pre-compose dialog box.
Option 3:
Your third attempt with the track matte. To soften the edges of a track matte apply a blur effect to the track matte layer.

I watched the tutorial you linked.
It's probably the worst way of doing that type of animation.
A way with less keyframes and I'd argue less trouble would be to use a Track Matte.

The consensus was that it isn't something Adobe can control, Apple may not allow aplication level control of mouse functions. It's an OS thing.
