シェイプやパスであれば、パスコンポーネント選択ツールやパス選択ツールは使えます。

その場合はキーボードでのカットやペーストは行えます。

ピクセル部分についてはBarbara_Ashが記載したように、事前の範囲選択が必須になります。

その際、特定単一レイヤーの要素全てを選択する場合は、該当レイヤーをCommandキーを押しながらクリックすると一度に全部選択はできます。

You can cut in Photoshop but you must first select the area you want to cut. Keep in mind that in Illustrator you are working with objects, and in Photoshop you are working with pixels. Photoshop has many selection tools and selection techniques. The best way to select depends on the image.
