P: Manual camera setting not applied to JPEG

Interesting one. In Pro mode, I changed the ISO and shutter speed before capturing a JPEG photo. The photo information has different settings. When I changed to DNG the settings I selected are there in the captured photo? Has something changed. Can we no longer adjust ISO in JPEG photos?
