None of the Acrobat products are document creation and editing tools. Yes, with appropriate versions of Acrobat and/or add-on services, you can do some limited editing (more like text touch-up) of existing text in existing PDF files but this is not a word processor.

 

Conceivably if your contracts are pretty much all the same and all you need to do is fill in some fields, the forms capability of PDF might do. But forms creation is something you need the desktop version of Acrobat for although they can be filled in via the mobile version (assuming you aren't doing sophisticated Javascript manipulation of the forms fields).
