In order to Edit a pdf document using the Adobe Reader mobile application, first you need to subscribe for the Adobe Acrobat DC subscription. As this feature doesn't come up with the free application.

However, if you are already a subscriber of Acrobat DC service then you can easily edit the pdf file following the steps suggested in the help document here- Acrobat Reader Help for iOS: Edit a PDF
