Is there a way to actually edit PDFs in acrobat?

I just upgraded to the premium version because it said you can edit PDFs with the subscription. 

It says you can double click the text in a PDF and it'll pull it up and let you edit it, but it really just treats the entire pdf as a single image and doesn't really have any options except "delete" the whole page.

The "add text" option works I guess, but it just puts a line of text over something else, so apart from being unreadable that way, it's still not really editing a PDF.
