Security for personal documents in stolen device with Adobe pdf reader app installed

Hi

My concern is for the personal documents that were available in Adobe scan and Adobe pdf reader in my stolen device.

If somehow I can make those documents unavailable from that device only.

I came here to try do the same thing my tablet  I want to uninstall it. Asso done has opened  it I don't want them to have access to my information . I have a passcode on but obviously they have got in.  Why can we not uninstall it if all our devices are linked
