I would like to own exclusive rights to an Adobe Stock photo.

How can I do that? Is this possible?

No, it's not possible. To start with, someone else may already have licensed it, and there is no way Adobe could take that away from them to give exclusivity to you. Also, the photo may be available from other Stock Services. 

 

If you want an exclusive photo you will need to make a contract with a photographer directly, which specifies this.

To get exclusive rights, you need to get somone doing something for you. As soon as it is put in stock, anyone may licence and even if the creator would rake the asset out of stock, all people having acquired a licence before will still be able to use that item.
