I have a question, to what is allowed with a basic license (Standardlizenz).

Is it allowed to replace an item in the hand of a person on the picture by another? E.g. a pencil by a ballpen etc? or a product from brand A by a product from brand B (in the same segment)?

 

Is it allowed to make a composition? so use the pic as a background and place other things like a product and a Logo, text etc in front of it?

Q1: Yes. The licensing terms allow you to modify the image to a great extent. There are a few exceptions, but they do not trigger here. Read the licensing terms, there is reference to modifying assets.

 

Q2: Yes. Basically, the same as Q1.
