If I switch my current adobe stock plan to a different, will I lose all my current assets I have?

You might. If you move to a plan with fewer assets per month you won't be able to keep your quota. If you are moving from a smaller plan to larger plan in most cases you can retain your quota. It can also depend if your plan has rollover (quota that accrues every month).
