Adobe Sign Prepare Signature Roles in Prepare Form

I am working with a lease document that I have prepared using Prepare Form in Acrobat DC.  I have all fields defined including Signature boxess.   When I move to signature step by clicking Adobe Sign and add the email addresses of those who need to sign in it "guesses" who is signing or filling in what field.  Most fields are set to "Anyone".  I really want most fields to be available by Sender to Fill In but not modifiable by anyone else.  I also would prefer to be able to predefine which signature goes where - Signature 1, 2 etc before Adobe Sign.  It seems that I have to go through all the fields in Adobe Sign making sure this is set right every time before sending and it takes a long time.  I am sure there must be a better way to do this!  

I have tried Adobe Template - but do not know how to share the template with my team for them to fill in & receiving the form prefilled and ready for signatures is working.  It is just time consuming filling it all in.  Thanks for any help with this.
