Adobe Sign Questions

Once I am in the assigning signature field and signors contact information, is there way to edit the documentg without losing all the mapped signature fields I just set up?

Also, how do I change the order it shoudl be sent out for signature and can that be done after it has already been sent out?   ex  adobe sign doc sent for signature but the first person to receive does not want to sign until the other person has signed and adobe wont sent to them until the first one signs.

I am trying to avoid doing everything over again....
