I am currently looking at the capabilities of Adobe Sign. There will be multiple pdf documents with form fields (digital signature fields) already placed in them by Adobe professional software (Adobe Acrobat XI Pro). Can these pre-existing form fields be used in Adobe sign for work flows without having to add the form fields to each individual pdf in adobe sign?

As you have mentioned above, you need to know if the pre-existing form fields created on Acrobat will work once the form is uploaded in Adobe sign.
Yes, once you upload the form, Adobe Sign application will detect the form fields on the form.
