Can't e-sign a document since updating Microsoft Edge

When one of our user's sends a document to be reviewed and signed, they are hit with the following error:
"An error was encountered while processing the file. Some features might not work."
This has starting cropping up in the last couple of days and the only difference between users who see this error and one's where it still works is their version of Microsoft Edge. Users on Microsoft Edge v143 work still, users updating to v144 get that error. If you try to continue you are just met with a perpetual "Preparing document" loading message and can't get any further.
Went through Adobe support but was met with the usual "clear cache/clear cookies/try a different browser" which does not solve our issue. Has anyone else encountered this error before?
