Can we change the Text In PDF - Salesforce Adobe Sign

I have been using a Trail of Adobe Sign for a Client Based in the United States. We were successful in implementing it in the Salesforce Sandbox but we are curious to know if we can manipulate or Change the document before sending it to the Client in Adobe Sign. 
 
Main feature we are looking is Strikethrough.

Adobe Sign is not a PDF editor, edit the PDF in Acrobat or other PDF editors before uploading to Sign.
