Can you limit recipient to only sign using the draw feature?

You can restrict the user to drawing their handwritten signature in the Adobe Sign "Account" tab. From there, go to Account settings > Signature Preferences. There is a setting: "Allow recipients to sign and initial by" where you can select the options your signers have to sign the agreement.  In your case, you only want to select "Drawing a handwritten signature and initials on the screen"
