Can you send one document to multiple people for individual signatures?
I understand that you can send to up to 11 email addresses but I need to have each person be able to sign their individual documents is this possible?

If you have a business level account in E-Sign, then you can use the MegaSign feature for the above workflow:
Send a Mega Sign with a CSV file | Adobe eSign services
