Change or delete e-signature

I always used Adobe Acrobat to sign business documents and now i have to change my signatures due to new registration and burocratic reasons... and i cant find a way. The Offical adobe how to is clearly outdated. 

I cant even delete my old e-sign. This should be simples. I feel like im really fighting Adobe ps, ai, etc theses days. Everything is so hidden into menus and new interfaces. What a ba UX package overall.
