Changing default notification email address

Hi there.

I run a company with 2 other directors.

Recently we have changed our job roles within the organisation and now we need to change the email address of the person receiving the notification emails (this document has been sent out, or this document attached has been signed and filed) from my email to one of the other directors.

I can’t see how to change the email that receives the notifications like this.

Can anyone help?
