Changing email (or adding a 2nd email) to the Admin side

I'm the one in the office 95% of the time, and would like the signed documents to come back to my email, as I often do not know when they have been signed and returned.  Is there a way to change the email address on file, or even to ADD a secondary email so I get copied?

I have email address in my  external archive but we aren't getting any emails. None of us are. How do I correct that?
