If I delete a document after it has been signed, the email link remains active for both parties, therefore Adobe have not deleted it. Under EU data protection regulations we must ensure the document is not stored on Adobe's servers longer than permitted. We need to have control as to how long the document is saved for. How do we ensure it is properly deleted and the embedded links from the emails therefore no longer work?

You can request a Data Retention policy to be configured on your account in EchoSign by contacting Support. Please follow below mention steps:
1- Login into your Adobe Sign account using this link: Sign In — e-signature and e-sign Software Solution — Adobe Sign
2- Once logged in, click question mark icon in the top-right corner of the screen and select from the help options available on the page.
