E-Signature "More Options" missing in Pro

When opening the Request E-Signature tool, and adding an email address, I am no longer greeted with the More Options clickable text to open advanced options.

Has anyone encountered this before and if so, have a fix? Some within the same company and license have the option whilst others don't.
