Thanks for the response.
As the sender, you cannot pre-fill or lock a name for someone without an account. Acrobat Sign always lets the signer confirm or change it.
What the signer can do here:

When they click the link to open your document, look for their name shown in the signature block or in the top-right signer info box.

Click directly on the name field (or next to the signature) — it should become editable.

Type in the correct first and last name before completing the signature.

Once submitted, Acrobat Sign will store the correct name for that email address so it appears properly in the final signed PDF and audit report.
