Editing Fields of a Custom Workflow After Initiation

We are using a custom workflow between our recruiter, president, HR head and new hire candidate for singing Offers of Employment documents. Our recruiter intiates the workflow with an internal document and final offer document for president and HR head to review.

The workflow looks like this: (1) Recruiter Form Filler - (2) President Approver - (3) HR Quality Check Approver - (4) Recruiter Acceptor, needs to be the sender to candidate - (5) Candidate Signs

My question is - if the president or HR head discover mistakes or numbers that need to be adjusted, is there a way to edit those fields before sending to candidate? I've tried utilizing the "anyone" field but it still only remains editable to the first person. Right now when a typo or change happens, the workflow is being declined and restarted every time. We'd like to make it more flexible somehow but the article below seems to suggest it's not possible through modification.

Any thoughts? Could I make the fields editable by more than just the recruiter to allow for more flexibility before it reaches the candidate for signature? Could I adjust the approver role or add another step to the flow to allow this? Or put our HR head quality check role in parallel with our recruiter so both can edit the same fields?
