I'm looking to update my profile, I need the email & name changed. In my profile I cannot do this.
My question is, do I have to update my creative cloud account, then go through the verification again?

Sorry for the delay in response.
I assume you are referring to the making changes on Adobe Sign account? If yes, then following the steps mentioned in the help document below yo can apply the changes.
