When I receive the e-signed documents I am getting back a pdf showing all email addresses I sent the document to, even though this was sent to each e-mail address separately. I do hope that it is some sort of summary just for me and not showing all the separate individuals who got the document, since it is a confidential research process?

If you want to send document separately to several signers and need to receive individual signed copy, then you would need to use MegaSign feature:
Send a Mega Sign with a CSV file | Adobe Sign
