Thank you. The support team did guide me to the reports available in Adobe Sign, one of which is a change to all account settings. I was able to create an export of this report and have the information I need.

If you are referring to getting the account settings exported to the documentation, there is no option. We checked that you have the Acrobat Sign Entperise account. I would suggest checking with the Adoe Sign enterprise team once to see if there is any alternate way. You may contact them using the steps in the following help document: https://helpx.adobe.com/sign/using/adobesign-support-resources.html.
