How can admin be copied whenever a signed document comes back in response to a member of the team?

My team sends out proposed contracts. If a prospective client signs the contract (becoming a client), I want to be notified automatically by copy as the admin rather than relying on my team member to notify me.  How can I set this up so it is automatically copied to me without fail?
