How can I batch export documents?

How can I easily export 500+ documents that will be signed via MegaSign?  Each employee will be using MegaSign to sign 5+ documents and at the end of the project, we need an easy way to export all the documents and print hardcopy with signatures to put into a file.

Is there a way to have the export put the output files into a logical structure (i.e. files/documents with in folders by recipient name), so it's easier to print and file by recipient name?
