Hi Steven,
To amend an Adobe Sign document after you've sent the document for signature - you'd need to Adobe Sign In-flight Modification feature which is only available with the Adobe Sign Enterprise license. Please note that this feature only works after the document has been sent and prior to the document being e-Signed and/or Delegated/Cancelled.
Please also note that although you can't change the underlying text in a document (which isn't possible with Adobe Sign), this feature does allow for you to upload a new document where you've added or changed the content and remove the older agreement. You can also add/remove Adobe Sign fields.
