How to correct a mis-entered email address in Adobe Signature

Hi all,

I have an email address that is auto saved in Adobe signature that is incorrect, and similar enough to the correct signature (also saved) that documents periodically go to the wrong person.  (Sue.Smith2021@ vs Sue.Smith2020@ for example).  Is there a way to delete the incorrect address so that it doesn't autopopulate?  This has become a bit of an issue.
